Ingredients

  • 1 boneless chuck roast, thick cut, 3 to 4 pounds
  • salt, freshly ground black pepper
  • 3 tablespoons olive oil, plus more if needed
  • 2 medium yellow onions, chopped
  • 2 tablespoons minced fresh ginger
  • 1 teaspoon Chinese five-spice powder
  • 5 large cloves garlic, minced
  • 1/4 cup soy sauce, preferably reduced-sodium
  • 2 tablespoons oyster sauce
  • 1 cup reduced-sodium beef broth
  • 1/3 cup shaoxing wine or dry sherry
  • 1 cup water, plus more if needed
  • 2 teaspoons sugar
  • 1 star anise
  • 5 to 6 medium unpeeled Yukon potatoes, scrubbed and cut into chunks
  • 6 (or more) carrots, peeled and cut into 1-1/2-inch pieces
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • 3 scallions, trimmed and cut into 2-inch pieces
