Ingredients
- 1 Tbsp. Butter
- 6 x Large eggs,, mixed to a froth
- 1/2 c. Mushroom Duxelles,, recipe follows
- 1/4 c. Grated imported Parmesan cheese
- 1/4 c. Grated Swiss cheese
- 1/4 c. Grated sharp cheddar cheese

Duxelles Frittata With Three Cheeses

Directions
- In a 9-inch nonstick pan, heat the butter till golden. Pour the Large eggs into the pan over medium high heat and cook till set on the bottom, about 2 to 3 min. Spread the duxelles over the Large eggs, sprinkle with the Parmesan, Swiss, and cheddar cheeses. Run under the broiler till bubbly.
- Slide out of the pan onto a serving platter.
