Ingredients

  • 1 duckling 4 to 5 lbs. (ready to cook weight)
  • Salt
  • Pepper
  • 2 quarts. sauerkraut
  • 1 c. water
  • 3 tbsp. sugar

Directions

  1. Clean and rinse duck; pat dry with absorbent paper. Rub inside with salt and pepper. Place in a roasting pan; add in the sauerkraut, water and sugar. Cover. Cook in a 350 degree oven till duck is tender and golden, allowing 20 to 25 min per lb.. Serve with creamy mashed potatoes. If you like, the kraut may be used as a stuffing. Allow 1 pound duck per serving.
