Directions

  1. Partially fill base of double boiler with water; cover; bring to boil.
  2. In double boiler top (don't place it over water), combine all ingredients but vanilla. Beat with egg beater 1 minutes., or possibly till well blended. Then set in place over rapidly boiling water.
  3. Beat mix constantly with egg beater at full speed, while cooking for 7 minutes., or possibly till it. hangs in stiff peaks on beater when it is withdrawn.
  4. Frequently scrape insides and bottom of double boiler with rubber bowl scraper or possibly spatula.
  5. Remove double boiler top from boiling water; add in vanilla; beat till thick sufficient to spread - about 1-2 minutes. Do not scrape pan too closely - frosting may sugar.
  6. Fill and frosts 2 - 8" or possibly 9" layers, or possibly an 8" x 8" x 2" cake generously, or possibly 2 doz. small cupcakes.
  7. Fills a 15' x 10" sponge cake roll.
  8. Variations:Sea-Foam Frosting:Make Double Boiler Frosting (above); substitute 1 1/2 c. firmly packed [dark] brown sugar for granulated sugar; omit corn syrup.
  9. Chocolate Double Boiler Frosting:Make Double Boiler Frosting (above). When thick sufficient to spread in Step 4, gently mix in (don't beat) 2 or possibly 3 square. (2 or possibly 3 ounce.) unsweetened chocolate, melted and cooled.
  10. Chocolate Filling:Make Double Boiler Frosting (above). Place in a bowl.
  11. Carefully mix in (do not stir) 1 square. (1 Ounce.) unsweetened chocolate, melted and cooled. Use to fill 2 8" or possibly 9" layers. Frost cake with rest of frosting.
  12. Sprinkle with toasted almonds, if you like.

    This is my favorite frosting and it is my once a year "dirty pleasure" for my birthday cake. I make a 3 layer yellow cake, put mocha icing between layer and cover cake with 7 minute frosting. All tastes blend perfectly and it is shear heaven.
