A fresh-made "leftover surprise" type dish, that I invented. My family seems to like it a lot. For about $2, you can have a nice simple meal for two or use it as a side dish for 4.

  • 4 medium potatoes, 3T salted butter, 1/2c lowfat milk, half chicken breast, head of broccoli, 1/4c grated cheddar cheese salt, pepper, paprika


  1. Mashed potatoes: peel, quarter, and steam potatoes for ~20min until soft. In a large mixing bowl, mash, mix, and stir the butter, salt, pepper, and milk to taste
  2. Broccoli: Steam broccoli until al-dente (it should still be firm). Immediately sprinkle grated cheese on hot broccoli so it melts. Stir a couple times to coat the melted cheese on the broccoli
  3. Chicken: Grill half chicken breast, covered, medium heat. Allow to rest a few minutes, then dice, and season with paprika
  4. Finish: In large mixing bowl, use rubber spatula to fold chicken and broccoli into the mashed potatoes
