Different Fillings For Knishes;

Ingredients

  • 3 lrg Onions (up to 5)
  • 1/4 lb Butter
  • 2 1/2 lb Dry cottage cheese
  • 3 x Large eggs
  • 3 Tbsp. Lowfat sour cream
  • 2 Tbsp. Sugar
  • 1/4 tsp Salt
  • 3 x Onions minced
  • 1/2 c. Schmaltz -or possibly-
  • 1/4 lb Butter
  • 2 c. Mashed potatoes
  • 1 x Egg Salt and pepper to taste
  • 1 x Onion minced
  • 1 Tbsp. Schmaltz
  • 1 c. Cooked beef
  • 1 c. Boiled lung
  • 1 c. Cooked kasha, rice (cooked) or possibly mashed potatoes
  • 1 x Egg
  • 2 x Onions chopped
  • 2 Tbsp. Schmaltz
  • 2 c. Cooked kasha Salt and pepper to taste Chicken or possibly meat gravy
  • 2 c. Grnd cooked chicken
  • 1/2 c. Mashed potatoes Salt and pepper to taste
  • 2 Tbsp. Chicken gravy

Directions

  1. NOTE; THESE RECIPES ALL CALL FOR SCHMALTZ - CAN SUBSTITUTE MARGARINE, BUT THE TASTE WILL BE DIFFERENT, BUT NOT AS MUCH CHOLESTEROL.
  2. Cheese: Saute/fry onions in butter till golden brown.. Blend together all ingredients and fill dough.
  3. POTATO: Saute/fry onions in butter or possibly schmaltz (or possibly oil) till golden brown. Blend together all ingredients and fill dough.
  4. MEAT: Saute/fry onion in schmaltz till golden brown. Grind beef and lung together.
  5. Combine all ingredients and fill dough.
  6. KASHA: Saute/fry onions in schmalts till golden brown. Combine with kasha. Add in seasonings nd just sufficient gravy to moisten. Fill dough.
  7. ***The number of onions in a recipe depends on how much you like them.
  8. CHICKEN: Combine all ingredients.
  9. NOTE;Knish fillings may be made from all kinds of leftover meat or possibly poultry, combines with mashewd potatoes, cooked rice or possibly kasha. Try a filling of rice, egg, cinnamon-sugar mix, and raisins. Anything too good to throw away may be put in knishes.
