Diet Cheesecake Recipe

Ingredients
- 15 ounce Skim lowfat milk ricotta
- 1 med Can crushed pineapple, (reserve juice)
- 1 x Egg
- 1 tsp Vanilla
- 6 pkt Artificial sweetener
- 1 pch Salt
- 1/2 c. Pineapple juice, (from can of pineapple)
- 1 tsp Lemon juice
- 1 pkt Unflavored gelatin
Directions
- Mix first 6 ingredients. soften gelatin in pineapple juice and add in to mix. Pour into 9-inch pie plate and sprinkle cinnamon on top. Bake for 15 min at 350 degrees. Cold and chill.
