Diane's Chicken Curry

Ingredients

  • 1/4 c. + 2 tbsp. butter
  • 1/2 c. chopped onion
  • 1 tbsp. curry pwdr
  • 1/4 c. + 2 tbsp. flour
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon sugar
  • 1/4 teaspoon grnd ginger
  • 2 c. chicken bouillon
  • 2 c. lowfat milk
  • 4 c. cooked, cut up chicken
  • 1 teaspoon lemon juice

Directions

  1. Heat butter over low heat. Saute/fry onion and curry pwdr till onion is tender. Add in flour, salt, ginger and sugar. Cook till smooth and bubbly. Remove from heat. Add in chicken broth and lowfat milk. Bring to boil, stirring constantly. Boil about 1 minute. Add in chicken and lemon juice and heat through. Serve over rice. Accompaniment: Chutney, pineapple chunks, peanuts, raisins, coconut, currant jelly. Makes 8.
