Diab Brussels Sprouts And Canadian Bacon

Ingredients

  • 2 lb fresh Brussels sprouts stems and leaves removed extra virgin olive oil cooking spray
  • 1 Tbsp. reduced-calorie margarine
  • 2 x shallots chopped
  • 3 ounce Canadian bacon in 1/4" dice
  • 2 Tbsp. fresh lemon juice

Directions

  1. 1. Cut a small X in the root end of each Brussels sprout. If they are large, cut in half lengthwise. Place in a large saucepan with boiling water to cover. Reduce heat and cook till tender to the bite, about 5 to 7 min. Drain. (May be made ahead up to this point and refrigerated in a covered container.)
  2. 2. Shortly before serving, heat oil and margarine in a large nonstick skillet over medium heat. Add in shallots and Canadian Bacon. Saute/fry, stirring frequently, till shallots are soft and bacon is browned, about 5 min.
  3. 3. Toss in the Brussels sprouts and continue to cook, stirring frequently, till Brussels sprouts are warm. Add in lemon juice and continue to cook for another minute.
  4. 4. Transfer mix to a serving dish and serve.
