Directions

  1. Heat butter in nonstick skillet over medium-high heat. Add in apples, sugar, lemon juice and cinnamon. Saute/fry till apples are glazed, about 4 min.
  2. Combine potatoes, apple mix, Large eggs, matzo meal and salt in large bowl. Mix well.
  3. Heat 2 to 3 Tbsp. oil in nonstick skillet. Spoon 1 tablespoonful potato mix per latke into oil and flatten each with back of spoon. Cook till golden, turning once, 3 to 5 min a side.
  4. Drain on paper towels. Just before serving, sprinkle with powdered sugar.
  5. This recipe yields 24 latkes.
  6. Comments: In earlier times extra virgin olive oil was the only acceptable frying oil for Hanukkah because it was the oil used in the temple. Today, however, any oil is acceptable. I use safflower, sunflower or possibly peanut oil for deep frying, but I always use extra virgin olive oil for frying latkes.
