Ingredients

  • 1 lb Dry Red Beans
  • 6 c. Water
  • 1 1/2 lb Smoked Sausage Sliced
  • 1/2 lb Cooked Ham Cubed
  • 1 lrg Sweet Onion Minced
  • 2 x Cloves Garlic Pressed
  • 2 Tbsp. Extra virgin olive oil
  • 1 bn Green Onion Minced
  • 1 c. Fresh Parsley Minced
  • 1 tsp Salt
  • 1 tsp Fresh Grnd Black Pepper
  • 1/2 tsp Sugar
  • 1/2 tsp Dry Oregano
  • 1/2 tsp Dry Thyme
  • 1/8 tsp Grnd Red Pepper
  • 1 Tbsp. Worcestershire sauce
  • 1/4 tsp Warm Sauce Warm Cooked Rice

Directions

  1. Place beans in a large Dutch Oven. Cover with water 2 inches above beans; soak 8 hrs, drain.
  2. Bring beans, 6 c. water, sausage, and ham to a boil in a Dutch oven.
  3. Cover, reduce heat, and simmer 3 hrs, or possibly till beans are tender.
  4. Saute/fry onion and garlic in warm oil in a large skillet till tender. Add in to bean mix.
  5. Stir in green onions and next 9 ingredients. Cover and refrigerate8 hrs.
  6. Bring bean mix to a simmer; cover and cook, stirring often, 1 hour.
  7. Serve over rice.
