  • 3pkt 200g coconut biscuits, like Tealovers/Tennis
  • 1.5 tins of sweetened condensed milk, chilled overnight (the SECRET)
  • 3/4 c lemon juice
  • 1 1/2 pkt lemon flavoured jelly
  • 1 tin peach /pine-aplle , drained, reserve juice
  • 2 tbsp roasted coconut
  • 1 1/2 c prepared custard, vanilla flavoured, slightly cooled
  • To finish
  • Cocolate of your choice
  • A few nuts, pecan, walnut
  • 1 cup thick cream
  • 3 tbsp fine sugar
  • 1/2 tsp gelatine
  • More roasted coconut
  • A few glaced, halved cherries

Directions

  1. Rinse out 3 glass or aluminium loaf pans
  2. Dissolve the jelly with 1/2 boiling water, and the reserved juice
  3. According to the directions, cool.
  4. Wisk the chilled condensed milk until it becomes thick and creamy
  5. Layer the biscuits to form the crust, both bottom and sides
  6. Add a layer of custard
  7. Make a layer of bisciits
  8. Spread a layer of condensed milk mixture
  9. Place a few pieces of fruit, here and there
  10. Sprinkle a few broken nuts among them
  11. Repeat biscit layer
  12. Repeat with the rest of the custard
  13. Layer biscuits
  14. Add final layer of condensed milk mixture
  15. Refrigerate until set.
  16. Whisk cream, gelatine and fine sugar until thick, fill a piping bag with a nozzle of your choice
  17. Halve cherries
  18. Pipe rosettes on the surface of the tart
  19. Place more fruit pieces among the rosettes
  20. Decorate with cherries, nuts and chocolate curls using your potato peeler ending off with a light sprinkling of roasted coconut
  21. Rerefrigerate to allow the cream to stay solid (the gelatine will ensure that the cream doesn't melt while travelling.)
