This banana bread recipe is fairly simple to make; and the Avocado Frosting is a wonderful topping.

Directions

  1. Preparation:
  2. - Preset the oven to 350°F.
  3. - Cream together the vegan margarine and sugar, then stir in the flour, baking powder and baking soda.
  4. - Add the remaining ingredients and mix thoroughly.
  5. - Pour into a lightly greased loaf pan and bake for approximately one hour or just until the cake springs back when lightly touched.
  6. - Remove from the oven and cool for about 10 minutes.
  7. - Remove the bread from the baking pan and let it cool completely on a wire rack.
  8. - Once the cake is cooled, spread on the Avocado Frosting below for a distinctive combination of taste and texture.
  9. Directions:
  10. - Slice the avocados lengthwise. You will have some resistance in the center because of its large seed, so slice circumferentially and separate the halves. Remove the single seed as well as the light brown membrane in the crater on the meat halves. Slice the avocados for easier handling when mashing. Mash the avocado meat with a fork using heavy force.
  11. - While mashing the meat, gradually add the condensed milk, pouring in a threadlike stream. This will make the avocado easier to mash and also pre-sweeten the meat prior to incorporating with the lemon juice.
  12. - Place the mashed avocado meat mixture into a large mixing bowl along with the lemon juice and beat until creamy and lightened in color (approximately 3 minutes). Make sure there are no lumps and pick out any fibrous pieces if you see any.
  13. - Add the lemon extract and continue mixing to thoroughly incorporate and evenly distribute the extract.
  14. - Add the sifted confectioner's sugar, 1 teaspoon at a time, and beat until smooth. You may stop adding the sugar if you feel the frosting has become too sweet and is close to overwhelming the sour element of the lemon. We want to balance the mixture of sweet and sour taste.
  15. - Spread evenly on top of your Vegan Banana Bread.
