Deep Fried Vegetables ( Fritto Misto ) Recipe

  • 12 x male zucchini flowers
  • 2 x aubergines sliced into 1cm rounds
  • 3 x zucchini trimmed and cut into quarters lengthways
  • 24 lrg sage leaves
  • 12 x salted anchovies prepared (qv) sunflower oil for deep frying
  • 3 x lemons
  • 225 gm plain flour
  • 4 Tbsp. extra virgin extra virgin olive oil about 300ml hot water sea salt and freshly grnd black pepper
  • 4 x extra large egg whites

Directions

  1. To make the batter sieve the flour into a large bowl.
  2. Pour the extra virgin olive oil into a well in the centre and slowly stir with a wooden spoon to combine the flour into the oil.
  3. Add in a little hot water till the batter is the consistency of double cream.
  4. Season and let stand for at least 2 hrs in a cold place.
  5. Prepare the zucchini flowers by removing the stamens and spiky sepals.
  6. Place the aubergine and zucchini in separate colanders with some salt and allow to drain of any bitter juices for a minimum of 30 min.
  7. Rinse and dry well.
  8. Wash the sage leaves and dry well.
  9. Rinse the anchovy fillets.
  10. Make a sandwich of two sage leaves with a piece of anchovy fillet in between.
  11. Press together: the wetness of the anchovies will hold the sage leaves.
  12. Heat the sunflower oil to 180C/350FJust before cooking beat the egg white till stiff and fold into the batter.
  13. Dip the aubergine zucchini and flowers into the batter allowing any excess batter to drain back into the bowl (the vegetables should only be thinly coated) and fry till light brown then drain on kitchen paper.
  14. Fry the anchovy sandwiches directly in the oil without any batter.
  15. Serve with half a lemon for each person.
  16. Recipe for batter differs from traditional italian batters in which it only uses egg whites and is therefore exceptionally light.
