Directions

  1. Season the chicken quarters with salt and toss in flour.
  2. Beat together the Large eggs lowfat milk and oil.
  3. Mix together the breadcrumbs and grated cheese.
  4. Dip the chicken quarters first into the egg mix and then into the breadcrumb mix.
  5. Heat the oil for deep frying.
  6. Fry the chicken quarters for 20 min till golden.
  7. Drain on absorbent paper.
  8. Fry the parsley for 2 min.
  9. Arrange the chicken on a dish with the parsley and lemon slices.
  10. Serve with tomato sauce (qv).
  11. Serves 8
