  1. 1. Soak dry shrimp.
  2. 2. Deep-fry bean curd as in "Basic Deep-Fried Bean Curd". Mince scallion.
  3. Combine stock, sherry, salt and soy sauce.
  4. 3. Heat oil. Add in scallion and soaked shrimp; stir-fry a few times. Add in stock mix and heat quickly. Then simmer, covered, 5 min.
  5. 4. Add in deep-fried bean curd cubes; stir in only to heat through. Meanwhile, blend cornstarch and cool water to a paste; then stir in to thicken.
  6. VARIATION: For the dry shrimp and scallion, substitute 1 Tbsp. brown bean sauce, mashed, and 1 garlic clove, chopped; stir-fry as in step 3. Then add in plain stock (omit the sherry, salt and soy sauce). In step 4, add in 2 Tbsp. oyster sauce with the bean curd cubes.
