James called David to let him know and on the 3rd of December the three of us got together to toast her, and reminisce. When I met Marguerite I took to calling her mum, her only in-law to do so. She was an amazing person and exceptionally bright. One time I went to visit she was reading up on quantum astronomy. Her knowledge was vast and she would read up on mathematical problems just as often as she would consult books on plants. Print Recipe 0 from 0 votes Deep Dish Breakfast Pizza This is a great pizza to make when you have guests Recipe For: Breakfast All Rights Reserved: An original recipe from Lavender and Lime IngredientsFor the pizza base135 mls water3 g instant dry yeast3 g fructose187 g flour, plus extra for dusting15 g semolina flour45 mls canola oil, plus extra for greasing3 g fine saltFor the pizzaCooking spray70 g hard cheese, grated8 baby tomatoes, halved6 mushrooms, stalks removed and quarteredSalt and freshly ground black pepper to season4 eggs InstructionsFor the pizza base *Place the water, yeast and fructose into a stand mixer bowl Stir to combine and set aside for 5 minutes Add the flour and oil and use a dough hook to combine Once combined, add the salt and then use the hook to knead for 10 minutes Turn out onto a lightly floured surface and shape into a ball Oil a bowl and place the dough into the bowl, seam side down Cover and set aside to prove until doubled in size For the pizzaPreheat the oven to 245° Celsius and grease a loose bottomed quiche tin with cooking spray Place the dough into the tin and use your fingers to stretch it so that it comes up the sides Set aside to rest for 5 minutes then place into the oven to bake for 15 minutes Remove from the oven and reduce the temperature to 220° Celsius Poke holes in the centre bit and press it down and add the cheese, tomatoes and mushrooms Season and place back into the oven for 10 minutes Remove from the oven and break the eggs on top, trying to get one in each quarter Season and place back into the oven for 12 minutes emove from the oven and the dish and serve hot Notes* if you are using a breadmaker, place all of the ingredients into the container in the order listed. Set the breadmaker to dough / pizza and press start. Mine takes 50 minutes, which is enough time to get the rest of the ingredients ready and the oven heated up.
