  • 1/2 cup Sugar (*the original recipe calls for 3/4 cup, but i reduced it as the dates already make the muffins quite sweet)

there are some classic combinations that will never lose their appeal. my last post was on one such – oatmeal and raisins in cookies - and this week, i have yet another time-honoured combination: dates and walnuts. dates are used in several sweet concoctions, but adding walnuts lends a slight bitter edge that serves to enhance their taste even more so. a match made in heaven indeed recently, i found out that one of my colleagues is also an avid baker, and when i mentioned that i am a vegetarian, she asked me try this recipe and mentioned that it gave her amazing results. when i looked at the recipe, i realised that somone else had shared the same recipe a while back, but i had misplaced it along the way. well, it looked like the baking gods wanted to make sure i would try this out someday or another – and who am i to disobey their wish? i tinkered very slightly with the recipe to suit my own preferences, and i must admit – the muffins turned out amazing! and it wasn’t just me who liked them – my dad happened to chance upon them the day after i had made them and when i came back from work, mentioned that he liked them too (and since i wasn’t around when he tasted them, there was no obligation to be nice to me!). so, there you go – this one is a sure winner! :)

  • 1 cup All Purpose Flour
  • 1/2 cup Oil
  • 1 tsp Baking Soda
  • 1/2 cup chopped Walnuts
  • Making the Dates & Walnuts Muffins:

Heat the milk on the stove or the microwave until it is slightly hot (but not boiling). Pit the dates if they have seeds, cut them into half and put them into the heated milk. Mix it a bit and leave aside to cool. Preheat the oven to 170 deg C and line a muffin tin with paper liners. Sift the flour and the baking soda and leave aside as well. When the milk mixture had cooled, blend it all together, then add the sugar and blend again. Add the oil into the mixture and mix lightly. Then fold in the flour mixure a couple of tablespoons at a time. When all the flour has been mixed in, fold in the walnuts. Spoon the dough into the muffin tin upto two-thirds of the cup, smooth the tops lightly and bake for about 15 to 20 mins or until it is done. Take out and cool completely. While its cooling, brew up some coffee for the perfect tea-time treat! :)
