Date Drop Cookies Recipe
These cookies are the very first my mom taught me to bake, when I was 8 years old. They were my favorite cookies then, and they still are today. I just love the soft, chewy goodness of them!
Ingredients
- 1 cup water
- 2 cups dates*
- 1 tsp. baking soda
- 1 cup shortening
- 1 cup white sugar
- 1 cup brown sugar
- 3 eggs
- 3 cups all purpose flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1/4 tsp nutmeg
- 1 tsp. cinnamon
- 1 tsp vanilla extract
Directions
- Preheat oven to 350 degrees
- In a saucepan, bring the water and dates to the boil. Remove from heat and stir in the baking soda. Set aside to cool.
- Cream the shortening, white and brown sugar.
- Add in and mix the eggs, flour, salt, baking powder, nutmeg, cinnamon and vanilla extract, and the cooled date mixture.
- Drop by the spoonful onto a parchment paper-lined cookie sheet.
- Bake 12 to 15 minutes.
- *Raisins may be substituted for the dates, if desired
