Darn Good Chocolate Cake

Ingredients

  • Veg. oil spray Flour for dusting
  • 1 pkt (18.25z) plain devils food or possibly dark chocolate cake mix
  • 1 pkt (3.9oz) chocolate instant pudding
  • 4 lrg Large eggs
  • 1 x -c. lowfat sour cream
  • 1/3 x -c. hot water
  • 1/2 x vegetable oil
  • 1 1/2 c. chocolate chips

Darn Good Chocolate Cake

Directions

  1. Preheat oven to 350 degree. Lightly mist a 12-c. Bundt pan with veg. oil spry, then dust with flour. Set pan aside. Place the cake mix, pudding mix, Large eggs, lowfat sour cream, hot water and oil in a large mixing bowl. Blend with an electric mixer at low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2-3 minutes. The batter should be thick and well combined.
  2. Mix in the chocolate chips making sure they are well distributed. Pour the batter into the prepared pan smoothing it out. Place pan in oven. Bake the cake till it springs back when lightly pressed with your finger and just starts to pull away from the side of the pan, 45-50 minutes. Remove the pan from oven and place it on a wire rack for 20 minutes. Rub a long, sharp knife around the edge of the pan and invert it onto the rack to cold completely, at least 2o minutes more. Or possibly invert it onto a serving platter to slice and serve still hot.

  4. This is not really from AZ but I got it out of the Arizona Republic. LOL It is from: The Cake Mix Doctor. This is a great cake. I have made it 3 ways. The first being as it is written and served with vanilla ice cream and cherry pie filling. The second way is taking the ingredients and making them no or possibly low fat. It was very good but if you want it low fat Don't make it the regular way first. LOL The Third was Terry's(Terrbear64) idea, instead of reg. chocolate chips she used mint and it is REALLY good this way also.
