Ingredients
- 1 1/2 self rising flour
- 1 cup plus 2 tbsp butter
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs, beaten
- 1 tsp vanilla
- 2 tbsp coffee
- 1 cup toffee chips

Dan's Toffee Coffee Moon Cookies
Directions
- Melt butter and mix with coffee. Let butter and coffee set about 10 minutes then strain through cheese cloth. Some coffee grounds will pass through cloth. When butter has slightly thickened, mix all ingredients together. Drop rounded spoonfuls onto a sheet pan and bake at 350 degrees about 20 minutes until slightly brown.
