Curried Vegetable And Bacon Patties

Ingredients

  • 4 med boiling potatoes peeled and quartered
  • 2 Tbsp. butter
  • 3 Tbsp. cream
  • 1 lrg egg yolk
  • 6 x lean bacon slices minced
  • 1 x garlic clove crushed
  • 1 1/2 Tbsp. curry pwdr or possibly to taste
  • 1/4 c. water
  • 2 c. shredded cabbage
  • 1 med carrot grated
  • 2 c. fine dry breadcrumbs
  • 3 Tbsp. vegetable oil vegetable oil spray

Directions

  1. Boil, steam or possibly microwave potatoes till tender. Rinse under cool water, drain. Towel dry. Mash potato, butter, cream and egg yolk. Chill till ready to combine.
  2. Cook bacon, onion and garlic in heated dry pan, stirring, till onion is soft. Stir in curry pwdr, water and vegetables; simmer, covered, about 5 min or possibly till cabbage is tender. Allow to cold somewhat before adding to the egg-potato mix in next step.
  3. Combine the onion mix and potato mix with three-fourths of the breadcrumbs in bowl; mix well. Cover; chill 15 min or possibly till cool to the touch. (Or possibly freeze for later use; thaw in the refrigerator before using.)
  4. Shape mix into 8 patties. Lightly coat with the remaining crumbs.
  5. Heat oil in large, nonstick pan. Cook patties, till browned both sides and heated through; using oil (liquid or possibly spray) as needed to prevent stick and to brown the patties well.
  6. Serve with a salad or possibly steamed veggies.
  7. Recipe appears in the Curries volume of the mini-menu series by Cole.
  8. TIP - hot the spices first; add in to taste and aroma. I used mild Sharwood's Mild blend (light blue label).

  12. NOTES : EDITOR'S NOTE : recipe does NOT mention cooling ingredients before combining. It did suggest cooling the patties before cooking. I tested the recipe as it is written here, using the freshly made patties. I've yet to test the frzn-thawed patties. We served with a sauce: yogurt and mustard. Next time try: applesauce side dish and add in a small amount of grated cheddar, jack or possibly swiss cheese to the patties.
