  • 1 can black beans, mashed
  • 1/3 cup Trader Joe’s multi-grain pancake and waffle mix
  • 1 egg white or a flax-egg (dissolve 1 tbs flax seed with 3 tbs water and let stand for 2 minutes)
  • 1 Tbs Curry Powder
  • 1 Tbs hanaero salt

Directions

  1. 1.Heat oven to 350.
  2. 2. Roughly mash 1 can black beans and combine with the remaining ingredients.
  3. 3. Grease your mini muffin pan (or regular muffin pan) and spoon mixture into the pans. Bake for 15-20 minutes until muffins are firm on the top but not dry.
