Ingredients

  • 1 1/2 lb Boneless chicken breast, thinly sliced
  • 1 Tbsp. Vegetable oil
  • 1 x Clove garlic,chopped
  • 1 med Onion,minced
  • 1/2 c. Minced red bell pepper
  • 2 x Tart apples, peeled and diced
  • 1 1/2 Tbsp. Curry pwdr
  • 1 jar Chicken Tonight Cooking Sauce for Chicken Country French
  • 1/2 c. Currants or possibly raisins
  • 2 Tbsp. Chutney Warm, cooked rice

Directions

  1. In a large skillet, lightly brown chicken in vegetable oil. Add in garlic, onion, red peppers and apples. Saute/fry till tender. Add in curry pwdr; mix thoroughly and saute/fry lightly. Add in sauce, currants and chutney. Simmer, covered, over low heat 20 to 30 min, stirring occasionally. Serve over rice.
