Spanish rice

Spanish rice by Candice Goodyear

This rice was amazing found the recipe on a website called Let's Dish. I changed a few things. Instead of tomato sauce I used tomato bouillon powder and I replaced cayenne pepper with ground cumin. My family raved about the rice.

Tex-Mex Meatball Soup

Tex-Mex Meatball Soup by Salad Foodie

A hearty and colorful soup which can be cooked in about 30 minutes. Choose your meat type - beef, sausage, poultry, or a blend if preferred. Using crushed tortilla chips in meatball mixture is a nice way to bump up the corn flavor as well as use up the chip crumbles too small to serve.

Mango Chipotle Sauce/Glaze

Mango Chipotle Sauce/Glaze by Bob Vincent

This is a good sauce/glaze for almost anything. It is easy to make and stores refrigerated well for several days or if air tight much longer. I use it on grilled fish, chicken or pork. It can be used hot as a finishing sauce or cold as a glaze during the last few minutes of grilling. Adjust the chipotle peppers to your taste.

I like mine grilled with just a dusting of chili powder. Use your favorite kind of shell, corn or flour, crispy or not and pile the shrimp high with my pico…

We love love love Mexican food at our house so when Alessa and I decided to feature Mexican food as our theme this month I knew the family would love it! This particular recipe is so very easy and I tried to “healthy” it up a bit by baking instead of deep frying the taquitos. The result was delicious. You could use beef, pork or…
