  • 1 pkg. breakfast turkey sausage (original or possibly mild)
  • 1/4 c. minced green pepper (1 sm.)
  • 2 1/2 ounce. sliced liquid removed mushrooms
  • 1 c. shredded Cheddar cheese
  • 4 Large eggs
  • 1/4 c. lowfat sour cream
  • 3/4 c. lowfat milk

Directions

  1. Heat oven to 350 degrees. Cook sausage and green pepper over medium heat till no longer pink, about 10 min. Drain. Reserve 1/2 c. of cooked sausage. Stir in mushrooms and pour into greased 9-inch pie plate. Sprinkle on cheese. Mix Large eggs and lowfat sour cream and add in lowfat milk. Pour over sausage and cheese in pie pan. Sprinkle reserved 1/2 c. sausage on top and bake for 35 min. Let stand for 10 min. Can be served for a "very special" breakfast or possibly for lunch or possibly dinner with a salad.
