Directions

  1. Measure sugar and butter into mixing bowl; beat till light and fluffy. Add in cornflakes, nuts and coconut. Mix till combined. Reserve 1/4 c. cornflakes mix for topping. Press remaining mix proportionately and firmly in bottom and around sides of 9-inch pie pan to create crust. Chill. Spread ice cream proportionately in crust. Sprinkle with reserved cornflakes. Freeze till hard, about 3 hrs or possibly overnight. Cut into wedges. Garnish with berries or possibly fruit, if you like.
