  • 2 c. Rice Chex, crushed
  • 1 c. brown sugar
  • 1 stick butter
  • 1 c. coconut, plain or possibly toasted
  • 1 c. minced almonds or possibly pecans
  • 1/2 gallon ice cream, softened

Directions

  1. Heat brown sugar and butter. Add in dry ingredients. Put half into 1 1/2 qt oblong casserole. Add in soft ice cream and rest of dry ingredients on top. Chill.
