If you like a crumb cake with a crumb topping deep enough to swim in, this one is for you. Welcome to the BundtBakers March reveal. This is our third bake from Everyday Little Cakes by Candace Floyd. These little cakes are packed with flavor and won’t leave you with lots of leftovers that will either go to waste or waist. Our choices this month were: Crumb Cake Spice Cake with Brown Sugar Buttercream Jam Cake My choice was the Crumb Cake. After reading the recipe I was concerned about the amount of crumble topping being made. I along with lots of people love a deep buttery crumble topping. I also have never used all the crumble topping I made. Well, this time I decided to follow instructions to a T and use it all. Now I wish I hadn’t. For me, it was too much, and I scraped off most of it from my obligatory slice after the photoshoot. For my tastes, it over-powered the soft crumb of the cake itself and it just seemed to fade into the cake :(. The flavor of the cake is good, and a hot beverage is a great accompaniment to it. Author: Sandra Lee Garth Recipe type: Dessert Cuisine: American Serves: 9 Ingredients For the Topping 1½ cups all-purpose flour ¼ teaspoon salt ¼ teaspoon vanilla extract 1 cup packed Brown sugar 1 teaspoon ground cinnamon ½ cup unsalted butter melted For the Cake 1½ cups all-purpose flour ½ teaspoon baking soda ¾ teaspoon salt ½ teaspoon ground nutmeg 7 tablespoons unsalted butter, softened ½ cup granulated sugar ½ Cup packed Brown sugar 2 eggs room temperature ½ cup buttermilk 1 teaspoon vanilla extract Instructions Preheat the oven to 350°F and prepare an 8-inch square pan for nonstick baking. For the Topping: combine the flour, salt, vanilla, brown sugar, and cinnamon in a medium bowl. Pour the melted butter over all and fluff to form coarse crumbs then set aside. For the Cake: Whisk together or sift the flour, baking soda, salt, and nutmeg in a medium bowl and set aside. Next, place the butter in a mixing bowl and beat with an electric mixer at medium-high speed until creamy. Add the sugars and beat until fluffy about 5 minutes. Now, add the eggs one at a time and beat until smooth. Reduce the speed to low and add the flour mixture and buttermilk a little at a time beginning and ending with the flour mixture, beating until just combined. Add the vanilla and beat 30 seconds then scrape the batter into the prepared pan. Using your fingers, crumble the crumb mixture over the batter covering it completely. and gently pat the crumb topping over the batter. Bake the cake for 35 minutes or until a tester inserted in the center comes out clean. Place the pan on a wire rack and let the cake cool completely.
