%20and%20the%20Croque%20Madame%20(the%20Croque%20Monsieur%20served%20with%20a%20fried%20or%20poached%20egg%20on%20top).%20Well,%20leave%20it%20to%20Paula%20Deen%20to%20find%20a%20way%20to%20make%20this%20French%20sandwich%20into%20a%20casserole!%20I%20found%20this%20recipe%20in%20my%20copy%20of%20The%20Deen%20Family%20Cookbook%20(seen%20in%20my%20left%20sidebar).%3C/p%3E%3Cp%3ECertainly%20not%20on%20any%20list%20of%20healthy%20foods,%20I'd%20be%20willing%20to%20diet%20all%20week%20for%20a%20slice%20of%20this!%20My%20husband%20and%20I%20loved%20it.%20My%20kindergartner%20ate%20about%20half%20of%20her%20serving,%20exclaiming%20how%20good%20it%20tasted.%20But%20halfway%20through%20she%20stopped%20eating%20abruptly%20and%20asked,%20%22Does%20this%20have%20mustard%20in%20it?%20%22%20Before%20I%20could%20answer,%20she%20went%20on.%20%22Yes.%20Yes%20it%20does%20have%20mustard.%20I%20definitely%20taste%20mustard.%20YUCK!%20Mustard.%20I%20am%20NOT%20eating%20this.%22%20As%20my%20oldest%20went%20on%20complaining%20I%20noticed%20as%20her%20little%20sister%20quietly%20pushed%20her%20plate%20away%20as%20a%20sign%20of%20solidarity.%20Oh%20well,%20more%20for%20me!%3C/p%3E%3Cp%3EIf%20your%20children%20(or%20you)%20are%20not%20a%20fan%20of%20mustard,%20just%20leave%20it%20out.%20But%20definitely%20make%20this!%3C/p%3E%3Cp%3EHere's%20how:%3C/p%3E%3Cp%3EAs%20with%20many%20of%20Ms.%20Deen's%20recipes,%20we%20begin%20with%20butter.%20If%20you%20have%20a%20problem%20with%20the%20amount%20of%20butter%20used%20in%20this%20recipe,%20I'd%20like%20to%20quote%20the%20Queen%20of%20Southern%20Cooking%20here:%20%22I'm%20your%20cook,%20not%20your%20doctor!%22%3C/p%3E%3Cp%3EAnyway,%20melt%206%20tablespoons%20of%20butter%20in%20a%20large%20skillet%20to%20make%20the%20bechamel%20sauce.%20From%20The%20Deen%20Family%20Cookbook:%20Bechamel%20sauce-%20That's%20just%20French%20for%20plain%20ol'%20white%20sauce.%3C/p%3E%3Cp%3ECook%20the%20butter%20until%20it%20bubbles.%3C/p%3E%3Cp%3EWhisk%20in%20flour%20and%20cook%20for%20one%20minute.%3C/p%3E%3Cp%3ESlowly%20whisk%20in%202-1/2%20cups%20of%20milk%20and%20cook%20for%203%20to%205%20minutes%20until%20thick%20and%20bubbling.%3C/p%3E%3Cp%3EPour%20a%20thin%20layer%20of%20the%20sauce%20into%20a%20greased%20baking%20dish.%3C/p%3E%3Cp%3ECover%20with%205-6%20slices%20of%20bread.%3C/p%3E%3Cp%3ETop%20with%20half%20of%20the%20ham.%3C/p%3E%3Cp%3EAnd%20half%20of%20the%20cheese.%3C/p%3E%3Cp%3EThe%20recipe%20called%20for%20Gruyere%20cheese.%20Gruyere%20is%20an%20excellent%20melting%20cheese%20(ideal%20for%20fondues)%20with%20a%20taste%20that%20is%20distinctive%20but%20not%20overpowering.%20It%20takes%20it's%20name%20from%20the%20town%20of%20Gruy%C3%A8res%20in%20Switzerland.%20It%20IS%20a%20bit%20pricey.%20I%20think%20that%20I%20paid%20around%20$15%20for%20this%20bag%20of%20shredded%20fondue%20blend%20cheese%20at%20my%20local%20grocery.%20If%20you%20don't%20want%20to%20pay%20the%20price,%20you%20could%20always%20substitute%20your%20favorite%20Swiss%20cheese%20instead.%3C/p%3E%3Cp%3ERepeat%20the%20layers%20of%20bread,%20ham,%20and%20cheese,%20ending%20with%20the%20sauce.%3C/p%3E%3Cp%3EBake%20the%20casserole%20for%2030%20minutes.%20Then%20remove%20from%20the%20oven%20and%20cut%20into%206%20equal%20pieces.%3C/p%3E%3Cp%3EFry%20eggs%20in%20a%20skillet%20heated%20with%20the%20remaining%20butter.%3C/p%3E%3Cp%3EPlate%20the%20slices%20of%20casserole%20and%20top%20each%20with%20a%20fried%20egg.%3C/p%3E%3Cp%3ETime%20to%20dig%20in!%20I%20served%20mine%20with%20an%20Artisanal%20Blend%20of%20salad%20greens,%20which%20was%20added%20a%20nice%20crisp,%20refreshing%20taste%20in%20between%20bites%20of%20this%20rich,%20delicious%20casserole.%3C/p%3E%3Cp%3EHere's%20the%20recipe:%3C/p%3E%3Cp%3ECroque-Madame%20Casserole%20from%20Paula%20Deen's%20Deen%20Family%20Cookbook%3C/p%3E%3Cp%3EPrep%20Time:20%20min%3C/p%3E%3Cp%3ECook%20Time:40%20min%3C/p%3E%3Cp%3EServes:%206%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E%E2%80%A26%20tablespoons%20(1%20stick)%20butter,%20plus%202%20tablespoons%20for%20eggs%3C/p%3E%3Cp%3E%E2%80%A21/4%20cup%20all-purpose%20flour%3C/p%3E%3Cp%3E%E2%80%A22%20cups%20milk%3C/p%3E%3Cp%3E%E2%80%A22%20tablespoons%20Dijon%20mustard%3C/p%3E%3Cp%3E%E2%80%A23/4%20teaspoon%20salt,%20plus%20more%20for%20seasoning%3C/p%3E%3Cp%3E%E2%80%A21/2%20teaspoon%20pepper,%20plus%20more%20for%20seasoning%3C/p%3E%3Cp%3E%E2%80%A21/2%20teaspoon%20freshly%20grated%20nutmeg%3C/p%3E%3Cp%3E%E2%80%A210%20to%2012%20slices%20white%20bread%3C/p%3E%3Cp%3E%E2%80%A23/4%20pound%20deli%20ham%3C/p%3E%3Cp%3E%E2%80%A21%201/2%20cups%20(6%20ounces)%20grated%20Gruyere,%20reserve%20some%20for%20top%20of%20casserole%3C/p%3E%3Cp%3E%E2%80%A26%20eggs%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees%20F.%20Grease%20an%208-inch%20square%20baking%20dish.%3C/p%3E%3Cp%3EMelt%206%20tablespoons%20of%20butter%20in%20a%20large%20skillet%20over%20low%20heat%20until%20bubbling.%20Whisk%20in%20the%20flour%20and%20cook%20for%201%20minute.%20Slowly%20whisk%20i
