Crockpot Chuck Roast Chili Recipe

If you have to add beans, you ain't a real Texan.

I usually cook this with brisket, but decided to try chuck roast, which is much more flavorful and tender when braised.

  • 1 medium onion, finely chopped
  • 1/2 T oil
  • 3-4 lb. chuck roast, cut in small cubes or pieces
  • 3 cloves, chopped garlic, or 1 tsp powdered garlic
  • 1 or more T chile powder
  • 1/4 C tomato paste (suggestion: buy in a tube and keep in fridge for future use)
  • 8 oz. tomato sauce
  • 1 T cumin powder
  • 3 cans beef broth
  • 1 T chipotle adobo
  • 1 T soy sauce
  • 1/2 tsp. dry oregano
  • salt and pepper to taste
  • masa harina or cornmeal

Directions

  1. Saute the onions in oil and put everything in the crockpot for 8 hours on low.
  2. To thicken add masa or corn meal, stir several minutes and use more if needed.
