Directions

  1. Rinse lentils. Place in crockpot and add all remaining ingredients.
  2. Cook on LOW 7 to 9 hours or until lentils are tender.
  3. Adjust water as needed.
  4. To enhance flavor, prepare one day in advance.
  5. Makes about 6 servings.

      I was Inspired to try this as a pressure cooker recipe to get it to the table faster. I used a 4 quart Mirro Pressure Cooker and the same ingredients. Cooked 20 minutes @ 15 # pressure (Photo 2.) The lentils were still a bit chewy but the vegetables were too soft. However it still makes for a good soup day experience, especially the day after making and beyond. My next idea is to pressure cook the lentils in the 3 cups water for 10 minutes, reduce pressure, add the rest of ingredients and pressure cook another 10 minutes. Of course I could always cook it in a regular pan on back burner, or on High in the crock pot, but when an inspiration possesses me I give it my all. Alas, this is a work in progress!

        I love using the crock pot whenever I can. This looks like a good hearty winter soup recipe and nice and easy.
