Ingredients

  • 2 lbs ground beef
  • 1 medium onion (chopped)
  • 1 can (46 oz tomato juice)
  • 1 can (28 oz diced tomatoes, undrained)
  • 3 celery ribs (chopped)

We may have lucked out so far this winter and had very few of these days, but I assure you they will make their appearance like they do every year. MY LATEST VIDEOS Miss K is so excited about snow this year. She keeps asking if she can build a snowman, if it’s time to go skating with her cousins or if she can wear her boots. I wish I shared at least some of that enthusiasm. Not a single bit. The only enthusiasm I share with her is that I’ll be warming up in front of the fireplace with a big bowl of this delicious Chili Mac! Comfort food is where it’s in the winter. If you’ve never heard of putting pasta in chili, then you need to give it a try! Of course, since this is a chili mac recipe then it makes sense, but for me it’s all about the comfort of this meals. It’s big hearty and delicious! Is chili powder hot? It can be, chili powder is a combination of several spices like ancho chile powder, paprika, cumin and oregano. It is a rich, heady spice and a little goes a long way. The combination here is just perfect, but if you want to light up your food just a bit more, don’t be afraid to be generous with this tasty spice! Chili Mac Recipe The hubby and I both loved this Chili. I liked the addition of pasta to it because you can never have to much pasta in my life! It’s thick and yummy. If you like a little more bite to your chili feel free to add more chili powder. Also it’s a very thick, hearty chili with the addition of the pasta. If you prefer it a little thinner then add a little more tomato juice to the mixture!
