,%20a%20large%20batch%20of%20sour%20cream%20and%20chive%20mashed%20potatoes,%20stuffing%20(um,%20from%20a%20box,%20but%20its%20was%20good!),%20green%20bean%20casserole,%20and%20homemade%20gravy.%3C/p%3E%3Cp%3EI%20have%20never%20been%20a%20fan%20of%20potatoes.%20%20I%20believe%20I%20have%20told%20the%20story%20before%20about%20how%20I%20was%20caught%20tossing%20my%20mashed%20potatoes%20in%20my%20Aunt%20Marlene's%20garbage%20one%20year%20---%20all%20because%20I%20missed%20the%20trash%20can.%20%20Ugh.%20%20Boy%20was%20I%20a%20girl%20in%20trouble.%20%20However%20now%20as%20an%20adult%20I%20do%20love%20some%20mashed%20potatoes%20with%20gravy%20and%20corn%20mixed%20in.%20%20I%20also%20like%20crispy%20fried%20potatoes.%20%20I%20happened%20to%20be%20on%20allrecipes.com%20and%20was%20looking%20at%20their%20newest%20uploaded%20photos.%20%20I%20like%20to%20check%20them%20out%20and%20if%20I%20really%20like%20someone's%20photo,%20I%20will%20vote%20on%20it.%20%20I%20saw%20the%20photo%20for%20potato%20pancakes%20and%20decided%20to%20check%20out%20the%20recipe.%20%20I%20was%20thinking%20about%20those%20mashed%20potatoes%20in%20my%20refrigerator%20and%20how%20much%20I%20actually%20had%20and%20what%20could%20I%20do%20with%20some%20of%20them.%20%20That%20recipe%20made%20me%20remember%20that%20potato%20patties%20were%20a%20good%20idea!%3C/p%3E%3Cp%3EIt%20then%20hit%20me,%20what%20a%20perfect%20little%20party%20bite%20these%20could%20be.%20%20These%20could%20not%20only%20be%20used%20as%20a%20side%20dish%20to%20your%20meal%20(breakfast%20is%20a%20good%20meal%20to%20make%20this%20a%20side%20to%20also!)%20but%20they%20could%20be%20a%20part%20of%20an%20appetizer%20party.%3C/p%3E%3Cp%3E*A%20note%20about%20your%20mashed%20potatoes.%20%20When%20making%20this%20recipe,%20if%20your%20mashed%20potatoes%20are%20still%20kind%20of%20wet,%20then%20you%20will%20need%20to%20add%20more%20bread%20crumbs%20to%20help%20thicken%20the%20cakes%20up.%20%20I%20wouldn't%20skip%20the%20egg%20because%20that%20is%20a%20binder,%20although%20I'm%20sure%20you%20can%20get%20away%20with%20it%20by%20adding%20cheese%20or%20something%20else%20that%20would%20help%20keep%20the%20cakes%20together.%20%20My%20mashed%20potatoes%20were%20mashed%20with%20some%20butter%20and%20sour%20cream.%20%20I%20did%20not%20use%20any%20milk%20when%20mashing,%20so%20they%20were%20on%20the%20dryer%20side%20the%20next%20day%20when%20I%20made%20these%20cakes.%20%20I%20used%20about%201/4%20cup%20of%20the%20bread%20crumbs%20and%20they%20held%20their%20shape%20quite%20well.%20%20You%20will%20have%20to%20go%20with%20what%20you%20feel%20will%20work%20when%20it%20comes%20to%20your%20potatoes%20and%20how%20wet%20or%20dry%20they%20are.%3C/p%3E%3Cp%3ECut%20through%20mashed%20potatoes%20to%20crumble%20and%20loosen%20them%20up%20to%20prepare%20for%20mixing%20other%20ingredients%20in.%20%20Stir%20in%20egg,%20bread%20crumbs,%20seasoning,%20salt%20and%20pepper.%20%20I%20would%20probably%20put%20about%201/2%20cup%20fresh%20grated%20asiago%20or%20parmesean%20cheese%20in%20the%20next%20recipe%20I%20made.%20%20I%20like%20a%20bit%20of%20a%20stronger%20flavor%20and%20the%20cheese%20would%20add%20just%20that.%3C/p%3E%3Cp%3EOnce%20ingredients%20are%20well%20blended,%20prep%20a%20plate%20by%20covering%20it%20with%20bread%20crumbs.%20%20Scoop%20potato%20balls%20using%20small%20cookie%20scoop%20and%20place%20on%20top%20of%20crumbs.%20%20Roll%20ball%20over%20and%20coat%20opposite%20side,%20patting%20cake%20down%20some%20to%20flatten.%20%20Move%20to%20another%20plate%20until%20ready%20to%20fry.%20%20Repeat%20until%20all%20potato%20mixture%20has%20been%20scooped%20and%20coated.%3C/p%3E%3Cp%3EIf%20you%20are%20garnishing%20with%20bacon,%20after%20the%20bacon%20hash%20been%20cooked,%20you%20can%20use%20some%20of%20the%20bacon%20grease%20for%20frying%20these%20cakes.%20%20You%20may%20need%20to%20add%20more%20olive%20oil%20as%20you%20go%20along%20as%20the%20cakes%20do%20absorb%20the%20oil.%20%20If%20your%20not%20using%20bacon,%20then%20just%20go%20ahead%20and%20use%20olive%20oil.%20%20Heat%20oil%20in%20skillet%20until%20a%20few%20crumbs%20dropped%20in%20pan%20sizzles.%20%20Add%20cakes%20and%20brown%20on%20one%20side,%20cooking%20over%20medium%20to%20medium%20high%20heat.%20%20Stay%20with%20these%20as%20they%20cook%20as%20they%20can%20brown%20quickly.%20%20Once%20browned%20on%20first%20side,%20flip%20and%20cook%20until%20browned%20on%20second%20side.%20%20Do%20not%20keep%20flipping%20cakes.%20%20They%20will%20be%20fragile%20and%20can%20break%20easily%20by%20flipping%20over%20and%20over.%3C/p%3E%3Cp%3EPlace%20cakes%20on%20serving%20platter%20with%20sour%20cream,%20chives,%20and%20bacon%20as%20garnish.%20%20Another%20way%20you%20may%20enjoy%20these%20cakes%20would%20be%20to%20make%20them%20just%20a%20little%20larger%20and%20top%20a%20cake%20with%20a%20soft%20fried%20egg%20and%20salsa%20-%20perfect%20weekend%20breakfast%20or%20evening%20dinner!%20%20Enjoy!%3C/p%3E){kind=link}
