Crispy Horseradish Mahi Mahi

This was soooo good. This crust would be great on chicken too. I used whole hashbrowns, but I think I would recommend cutting them into smaller pieces. This is adapted from diabeticconnet.com

Ingredients

  • 1 c frozen hashbrowns, thawed
  • 1 shallot, minced
  • 1 T prepared horseradish
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 4 portions of Mahi Mahi
  • 4 tsp light mayonnaise
  • 1 T oil

Directions

  1. In a bowl combined the thawed potato, shallot, horseradish, mustard and seasonings.
  2. In a skillet heat 1 T of oil over medium heat.
  3. Lightly spread each Mahi Mahi fillet with 1 tsp of mayonnaise.
  4. Spoon the potato mixture evenly onto each piece.
  5. When the skillet is hot, carefully place the fish potato side down in the pan.
  6. Cook about 5 minutes per side, until the fish is cooked through. Be careful during flipping so that you don't lose the crunchy crust.
  7. Serve with lemon if you wish.
