Crispy Green Beans With Lemon Brown Butter

Ingredients

  • 1 pkt (16-oz) whole green beans, or possibly 1 lb. pole beans (not Kentucky Wonders), ends trimmed
  • 3 Tbsp. Unsalted butter
  • 1 Tbsp. Lemon juice
  • 1 tsp Salt, or possibly to taste
  • 1/2 tsp Pepper, or possibly to taste
  • 1 tsp Sugar, optional

Directions

  1. In medium saucepan, cook frzn green beans according to package directions. If using fresh beans, bring 1 qt water to a boil over high heat and stir in beans. Allow water to boil again, reduce heat slightly and cook vigorously till beans are easily pierced with a fork, tender, but not mushy, about 10 min.
  2. Drain beans and rinse with cool water to stop cooking. At this point, beans may be refrigerated till serving time.
  3. In medium saucepan, heat butter over medium-high heat. When butter begins to bubble, reduce heat to low and continue cooking till butter turns caramel colored and has brown flecks in it. Removefrom heat. Stir in lemon juice, salt and pepper to taste.
  4. Add in beans to saucepan, toss to coat proportionately and heat through. Adjust seasoning to taste, adding 1 tsp. sugar, if you like.
  5. Variation
  6. Cook 1 (16-oz) package frzn broccoli according to package directions, or possibly cook 1 lb. fresh broccoli florets, as fresh green beans above, till tender, 6 to 8 min. Proceed as above. Add in 1/2 tsp. grated nutmeg.
  7. Makes 8 servings.
