Ingredients
- 1 1/4 lbs. halibut steaks, cut 1 inch thick
- 2 teaspoon veg. oil
- 3/4 c. soft sour dough or possibly other bread crumbs
- 2 tbsp. grated Parmesan cheese
- 1 teaspoon snipped fresh tarragon or possibly 1/2 teaspoon dry
- 1/2 teaspoon paprika
- Dash of pepper
- Fresh tarragon sprigs (optional)
- Lemon wedges (optional)

Crispy Baked Halibut

Directions
- Cut fish into 4 portions; pat dry and brush with veg. oil. In a shallow baking dish, stir together bread crumbs, Parmesan cheese, tarragon, paprika, and pepper. Dip fish into crumb mix to coat both sides. Arrange pcs in a 12 x 7 1/2 x 2 inch baking dish. Sprinkle leftover bread crumb mix on top. Bake, uncovered, in a 450 degree oven for 8 to 12 min or possibly till fish flakes easily when tested with a fork.
