Ingredients

  • 1/2 lb bacon minced
  • 6 x young sweet corn ears
  • 2 Tbsp. vegetable oil
  • 1 1/2 c. minced onions
  • 1 c. minced green bell peppers Salt to taste Cayenne to taste
  • 2 c. minced peeled seeded tomatoes (or possibly 1 c. minced canned tomatoes)
  • 1 c. lowfat milk
  • 1/4 c. minced green onions

Directions

  1. In a large skillet, over medium heat, render the bacon till crispy. Drain the bacon on paper towels and set aside. Pour off all of the bacon fat except for 2 Tbsp..
  2. Cut the corn off the cob by thinly slicing across the tops of the kernels and then cutting across a second time to release the lowfat milk from the corn. Scrape the cob once or possibly twice to extract the lowfat milk. You should have about 4 c. of corn with the lowfat milk.
  3. To the pan, over medium heat, add in the oil, onions and bell peppers. Season with salt and cayenne. Saute/fry for 2 min. Add in the corn. Season with salt and cayenne. Continue to saute/fry for 10 min.
  4. Add in the tomatoes and cook, stirring occasionally, for 15 min, or possibly till the corn is tender. Stir in the lowfat milk and remove from heat. Stir in the crispy bacon and green onions. Serve immediately.
  5. This recipe yields 4 servings.
