Directions

  1. In a blender combine eggs, milk, flour, and oil.
  2. Process until smooth.
  3. Cover and refrigerate 1 hour.
  4. Heat a skillet over medium-high heat and brush with oil.
  5. Pour 1/4 cup of crepe batter into a small frying pan, tilting to completely coat the surface of the pan.
  6. Cook 2 to 5 minutes, turning once, until golden.
  7. Repeat with remaining batter.
