Ingredients

  • 1 1/2 lb Squirrel, or possibly other small game - (to 2 lbs)
  • 2 Tbsp. Chopped onion
  • 1 x Green pepper chopped
  • 1 x Celery rib chopped
  • 4 Tbsp. Butter
  • 4 Tbsp. Flour
  • 1/2 c. Minced onion
  • 1 Tbsp. Chopped parsley Pastry for 2-crust deep-dish pie unbaked

Directions

  1. Boil meat in water to cover, with chopped onion, green pepper, and celery, till tender. Remove meat, bone, and chop. Strain broth. Heat butter, stir in flour to make roux, and add in minced onion and parsley. Add in Meat and pour in strained broth; cook, stirring, till smooth. Cook over low heat for about 20 min. Turn into pastry-lined, deep 6-c. pie pan, top with pastry, and bake till crust is done.
  2. This recipe yields 4 to 6 servings.
