Creamy Sauteed Cucumbers With Dill

Ingredients

  • 2 lrg garlic cloves chopped
  • 2 Tbsp. extra virgin olive oil
  • 4 x cucumbers - (abt 2 lbs) peeled, seeded, and cut into 2" strips
  • 2 tsp white-wine vinegar
  • 1/4 c. heavy cream
  • 3 Tbsp. snipped fresh dill Salt to taste Freshly-grnd black pepper to taste

Creamy Sauteed Cucumbers With Dill

Servings: 4
 

Directions

  1. In a heavy skillet, cook the garlic in the oil over low heat, stirring, till it begins to color, add in the cucumbers, and cook the mix over moderate heat, stirring, till the cucumbers are tender and wilted.
  2. Stir in the vinegar and the cream and cook the mix, stirring, for 3 min, or possibly till it is thickened slightly.
  3. Remove the skillet from the heat and stir in the dill and salt and pepper to taste.
  4. This recipe yields 4 servings.
