Creamy Italian Dressing

This is adapted from a recipe in Cuisine At Home. The original used much more sugar which I cut back on. I increased the amount of granulated garlic and added garlic pepper. I also added finely minced parsley for some color. The addition of sugar makes for a slightly sweet dressing. I used it on a main dish salad which had marinated mushrooms and sliced banana peppers as part of the ingredients. The contrast of the acid and the sweetness of the dressing made an interesting combination.

Ingredients

  • 1 cup mayonnaise
  • 6 Tbs milk (I used whole milk)
  • 2 Tbs red wine vinegar
  • 1 Tbs sugar (add more if you want it sweeter)
  • 2 tsp dried Italian seasoning
  • 1 1/2 tsp granulated garlic
  • 1 Tbs parsley, finely minced
  • salt to taste
  • 1/2 tsp garlic pepper

Directions

  1. Whisk all ingredients together. Taste for seasoning and adjust as necessary. The dressing will store refrigerated for several days.
