  • 1/2 lb Goat cheese,, such as Montrachet or possibly Boucheron
  • 2 x Cloves garlic,, minced
  • 2 Tbsp. Cream
  • 8 slc Rustic country bread Extra virgin olive oil
  • 6 ounce Mesclun greens
  • 2 Tbsp. Snipped fresh chives

Directions

  1. With a hand blender combine cheese, garlic and cream and blend till smooth. Brush bread with garlic and grill. In a large bowl toss salad with extra virgin olive oil and good quality wine vinegar. Add in some snipped fresh chives.
  2. Divide among serving plates. Spread bread with goat cheese mix and top each salad with two croutes.
  3. Yield: 4 servings
