Creamy Chicken Spinach Soup Recipe

  • 9 ounce tortellini, cheese-filled
  • 1 can fat-free chicken broth
  • 2 can reduced fat cream of chicken soup
  • 10 ounce frzn minced spinach thawed and liquid removed
  • 9 ounce cooked chicken breast cubes frzn
  • 2 c. 1% low-fat lowfat milk
  • 1/2 tsp dry thyme
  • 1/4 tsp pepper

Directions

  1. Cook tortellini in a Dutch oven according to package directions, using 1 can broth instead of water. Add in soup and remaining ingredients, stirring well.
  2. Bring to a boil; cover, reduce heat to medium, and cook till thoroughly heated.
  3. NOTES : This cookbook is fast becoming one of my favorites. I was especially happy which this went together so quickly when I had to put dinner on hold to get a sick cat to the vet, and wanted to eat when we got back. I might change one of the cans of cream of chicken for cream of mushroom next time.
