Creamy Chicken Noodle Soup Recipe
Ingredients
- 4 tablespoons butter
- 2 large stalks celery, sliced
- 1 medium yellow onion, chopped
- 2 medium carrots, shredded (about 1 cup)
- 3 tablespoons flour
- 1 cup frozen whole-kernel corn
- 6 cups chicken stock or 3 cans low-sodium chicken broth
- 1 1/2 cups half and half
- 1 1/2 pounds boneless, skinless chicken breasts, cubed into 1-inch pieces

,%20The%20Young%20One%20was%20in%20the%20kitchen%20looking%20for%20something%20to%20eat%20(30%20minutes%20after%20dinner)%20and%20I%20was%20sitting%20in%20front%20of%20my%20laptop,%20playing%20a%20game%20(and%20using%20my%20earphones%20so%20I%20didn%E2%80%99t%20have%20to%20listen%20to%20the%20drivel%20on%20the%20television),%20when%20Beloved%20said,%20%E2%80%9CWhat%E2%80%99s%20that%20sound?%E2%80%9D%3C/p%3E%3Cp%3E%E2%80%9CWhat%20sound?%E2%80%9D%20The%20Young%20One%20and%20I%20both%20chimed%20in.%20%20I%20didn%E2%80%99t%20notice%20anything,%20what%20with%20the%20earphones%20and%20all,%20and%20I%20doubt%20The%20Young%20One%20could%20hear%20anything%20at%20all%20over%20the%20sound%20of%20all%20that%20chewing.%3C/p%3E%3Cp%3E%E2%80%9CWell,%20it%E2%80%99s%20stopped%20now,%E2%80%9D%20he%20said.%20%20But%20after%20awhile,%20he%20was%20asking%20again,%20%E2%80%9CWhat%E2%80%99s%20that%20sound?%E2%80%9D%3C/p%3E%3Cp%3EThis%20time%20we%20heard%20it%20too%20%E2%80%93%20sort%20of%20a%20soft%20humming,%20clicking%20sound.%20%20We%20wandered%20dutifully%20around%20the%20house,%20but%20couldn%E2%80%99t%20locate%20it;%20then%20it%20stopped%20again.%20%20So,%20we%20went%20to%20bed.%20%20%20Around%204%20a.m.,%20I%20woke%20up%20to%20a%20very%20loud,%20steady%20humming%20sound%20coming%20from%20the%20heating%20grate%20in%20the%20baseboards,%20located%20next%20to%20my%20side%20of%20the%20bed.%3C/p%3E%3Cp%3EUh-oh.%3C/p%3E%3Cp%3EIt%20stopped,%20and%20I%20tried%20to%20go%20back%20to%20sleep,%20but%20it%20wasn%E2%80%99t%20to%20be%20%E2%80%93%20the%20sound%20happened%20again%20a%20little%20bit%20later,%20then%20stopped%20all%20together.%20%20I%20finally%20dragged%20my%20butt%20out%20of%20bed%20around%205:15%20and%20realized%20I%20was%20freezing%20%E2%80%93%20I%20should%20have%20been,%20it%20was%20all%20of%2055%20degrees%20in%20the%20main%20part%20of%20the%20house,%20which%20was%20warmer%20by%20far%20than%20our%20bedroom.%20%20When%20Beloved%20got%20up%20at%20about%20an%20hour%20later,%20he%20wandered%20over%20to%20the%20thermostat%20and%20asked,%20%E2%80%9CWhy%20is%20it%20so%20damn%20cold%20in%20here?%E2%80%9D%3C/p%3E%3Cp%3E%E2%80%9CThe%20furnace%20went%20out%20last%20night,%E2%80%9D%20I%20said.%3C/p%3E%3Cp%3ETo%20make%20a%20long%20story%20a%20little%20shorter%20(like%20Jen,%20I%20don%E2%80%99t%20tell%20short%20stories,%20something%20that%20charms%20Beloved%20but%20drove%20The%20Ex%20bugshit)%20our%20furnace,%20which%20is%20as%20old%20as%20our%20house%20(which%20is%2030%20years%20old),%20up%20and%20died%20on%20us.%20%20What%E2%80%99s%20more,%20our%20hot%20water%20heater,%20also%20on%20its%20last%20legs,%20had%20developed%20a%20leak%20(the%20things%20you%20find%20when%20you%20go%20poking%20around%20in%20the%20dark%20corners%20of%20your%20basement,%20something%20I%20try%20never%20to%20do).%20%20So,%20we%20called%20the%20furnace%20people%20who%20sent%20a%20service%20guy%20to%20our%20house%20who%20told%20us%20that%20our%20furnace%20had%20gone%20to%20The%20Big%20Boiler%20Room%20in%20the%20Sky%20and%20our%20hot%20water%20heater%20wasn%E2%80%99t%20far%20behind%20it.%3C/p%3E%3Cp%3EOh.%20%20The%20joys%20of%20home%20ownership.%3C/p%3E%3Cp%3EYou%20don%E2%80%99t%20even%20want%20to%20know%20how%20much%20this%20is%20costing%20us%20%E2%80%93%20let%E2%80%99s%20just%20suffice%20to%20say%20we%E2%80%99re%20spending%20so%20much%20money%20on%20one%20of%20those%20ultra-super-duper%20energy%20efficient%20furnaces%20(with%20a%20humidifier!%20%20Can%20you%20gimme%20a%20hallelujah????)%20and%20a%20new%20water%20heater%20that%20they%20are%20going%20to%20throw%20in%20a%20new%20air-conditioning%20unit%20(which%20is%20apparently%20as%20old%20as%20the%20furnace)%20FOR%20FREE%20.%3C/p%3E%3Cp%3EYeah.%3C/p%3E%3Cp%3EAnyhoo,%20the%20new%20furnace%20won%E2%80%99t%20be%20here%20until%20today,%20so%20we%20were%20still%20stoking%20the%20fire%20in%20the%20fireplace%20last%20night,%20as%20well%20as%20keeping%20the%20oven%20running%20non-stop%20come%20dinner%20time%20last%20night%20(whose%20bright%20idea%20was%20it%20to%20buy%20such%20a%20damn%20big%20house%20in%20the%20first%20place?%20%20Oh,%20yeah%E2%80%A6mine)(Hey,%20we%20needed%20it%20at%20the%20time).%20%20To%20top%20everything%20else%20off,%20we%20had%20an%20extremely%20busy%20and%20stressful%20workday%20and%20Beloved%20still%20had%20to%20get%20ready%20to%20go%20out%20of%20town%20on%20business%20today,%20so%20our%20plans%20to%20go%20out%20to%20dinner%20went%20out%20the%20window%20and%20I%20ended%20up%20making%20this%20very%20good,%20very%20comforting%20and%20very%20warming%20soup.%3C/p%3E%3Cp%3EI%20used%20half%20a%20batch%20of%20homemade%20egg%20noodles%20(about%206%20ounces)%20in%20it,%20but%20if%20you%20wish%20to%20substitute%20some%20cubed%20Yukon%20Gold%20potatoes,%20this%20would%20make%20a%20dynamite%20chicken%20corn%20chowder.%20%20Ideally,%20you%20should%20boil%20a%20cut-up%20whole%20chicken%20for%20the%20broth,%20but%20I%20didn%E2%80%99t%20have%20the%20time%20so%20I%20used%20canned,%20low-sodium%20chicken%20broth%20and%20cubed%20boneless,%20skinless%20chicken%20breasts.%20%20And%20it%20was%20absolutely%20delicious,%20but%20make%20sure%20you%20don%E2%80%99t%20over-cook%20the%20chicken%20or%20it%20will%20get%20rubbery.%3C/p%3E%3Cp%3ECreamy%20Chicken%20Noodle%20Soup%3C/p%3E%3Cp%3E6%20generous%20servings%3C/p%3E%3Cp%3EMelt%20the%20butter%20in%20a%20large,%20heavy%20pot%20(I%20used%20my%20smaller%20stockpot)%20over%20medium%20heat.%20%20Add%20the%20celery,%20onion%20and%20carrots%20and%20cook,%20stirring%20frequently,%20until%20the%20onion%20is%20tender,%20about%207%20to%2010%20minutes.%20%20Sprinkle%20the%20flour%20over%20the%20vegetables,%20then%20stir%20to%20combine%20well;%20cook%20for%20another%203%20minutes,%20stirring%20frequently.%20%20Slowly%20add%20the%20chicken%20stock,%20stirring%20constantly,%20and%20bring%20the%20soup%20to%20a%20simmer.%20%20Simmer%20for%205%20minutes%20and%20add%20the%20corn.%20%20After%20another%205%20minutes,%20stir%20in%20the%20half%20and%20half%20and%20add%20the%20chicken;%20simmer%20until%20cooked%20through,%20about%207%20to%2010%20minutes,%20stirring%20frequently.%3C/p%3E%3Cp%3EWhile%20the%20chicken%20is%20cooking,%20cook%20the%20noodles%20in%20a%20large%20pot%20of%20boiling%20salted%20water%20until%20al%20dente%20(just%20tender,%20but%20still%20firm%20to%20the%20bite).%20%20Drain%20the%20noodles%20and%20add%20to%20the%20soup;%20simmer%20for%20another%202%20to%203%20minutes.%20%20Season%20to%20taste%20with%20salt%20and%20pepper,%20and%20serve.%3C/p%3E){kind=link}
