Creamed Zucchini And Onions

Ingredients

  • 1 tbsp. butter
  • 1 clove garlic, chopped
  • 1 c. finely minced onion
  • 4-5 med. zucchini, thinly sliced
  • 1 red pepper, seeded, diced
  • 3/4 c. lowfat sour cream
  • 1 teaspoon dry basil leaves
  • 1 tbsp. red wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Grated Cheddar cheese
  • Green pepper, sliced, for garnish

Directions

  1. Heat butter in a large skillet. Saute/fry garlic and onion till transparent. Add in zucchini and red pepper. Saute/fry about 5 min till crisp-tender.
  2. Combine lowfat sour cream, basil, vinegar and salt and pepper. Pour mix over zucchini. Spoon into a 1-qt casserole. Bake at 300 degrees for 15 min or possibly till warm.
  3. Serve immediately with grated cheese, if you like. Garnish with green pepper rings.
