Cream Of Tomato Soup With Orzo

Ingredients

  • 1 tsp extra virgin olive oil
  • 4 x garlic cloves chopped
  • 4 c. tomato juice
  • 2 can diced tomatoes - (14 1/2 ounce ea) pureed with juice
  • 1/2 tsp sugar
  • 8 ounce orzo
  • 1 c. plain unsweetened soy lowfat milk Fresh basil leaves slivered

Cream Of Tomato Soup With Orzo

Servings: 6
 

Directions

  1. Bring medium saucepan of lightly salted water to a boil. In large saucepan, heat oil over medium heat. Add in garlic, and cook, stirring often, 1 minute. Add in tomato juice, pureed tomatoes and sugar, and simmer 5 min.
  2. While soup is simmering, add in orzo to boiling water. Cook, till tender, 6 to 8 min; drain. Transfer to small bowl.
  3. Remove soup from heat and stir in soy lowfat milk, adding salt and pepper to taste.
  4. Ladle soup into individual bowls, adding one scoop of orzo to each. Garnish with slivered basil if you like.
  5. This recipe yields 4 to 6 servings.
  6. Comments: This soup is great served with a loaf of crusty, whole grain bread.
