Cranberry Pudding Dessert

This dessert is one that isn't too sweet, the nice balance between the tartness of the cranberries and the nice even sweetness of the vanilla sauce is like heaven - and it's a great way to use the cranberries that might be hanging around in the fridge after the holidays!

Ingredients

  • Cake
  • 1 c. sugar
  • 2 c. flour
  • 2 tsp. baking powder
  • 1 c. milk
  • 1 tbsp. melted butter
  • 2 1/2 c. whole cranberries, uncooked
  • Sauce
  • 1 c. sugar
  • 1/2 c. butter
  • 3/4 c. evaporated milk
  • 1 tsp. vanilla

Directions

  1. For the cake
  2. Sift together sugar, flour, and baking powder.
  3. Add milk, butter, and cranberries.
  4. Stir until all ingredients are well mixed.
  5. Bake in greased 8 x 13 inch pan at 350 degrees for 30 minutes or until top is lightly browned.
  6. Serve with sauce.
  7. For the sauce
  8. Heat sugar, butter, and evaporated milk together until butter melts. Add vanilla.
