Ingredients
- 3 c. cooked chicken, cut into bite-size pcs
- 3/4 c. minced celery
- 1 1/2 c. peeled and minced apples
- 3/4 c. minced walnuts
- 1 x to 2 Tbsp. capers
- 1 c. mayonnaise
- 2 Tbsp. Dijon mustard
- 1/2 tsp celery seed
- 1 c. fresh cranberries
- 3/4 tsp fresh ginger, peeled
- 1 sm orange, cut in chunks, peel included, seeds removed
- 1/2 x lemon, cut in chunks, peel included seeds removed
- 1/4 c. whole cranberry sauce

Cranberry Chicken Salad
Servings: 10
Directions
- Toss together chicken, celery, apples, walnuts and capers. Mix with mayonnaise, mustard and celery seeds.
- In food processor, blender or possibly food grinder, grind cranberries, ginger, orange and lemon. Mix with cranberry sauce.
