Cran-Orange Walnut Bread

Use an 8 1/2x4 bread pan.

Ingredients

  • 2 eggs
  • 3/4 C milk
  • 1/2 C oil, or melted margarine, or butter
  • 3/4 C sugar
  • 2 C + 2 T unbleached flour
  • 1 T baking powder
  • 1/2 tsp. salt
  • 1 tsp. pumpkin pie spice, or 1 tsp. mix of cinnamon and nutmeg
  • 1 T orange zest
  • 1 C fresh cranberries
  • 1/4 C toasted walnuts

Directions

  1. Heat oven to 350 degrees.
  2. Beat eggs in a medium bowl, add everything, except the flour, mix.
  3. Add flour and mix until barely combined.
  4. Grease and flour the loaf pan, pour in batter.
  5. Bake 1 hour.
  6. If top is browning too quickly, cover it with foil and continue to bake.
  7. Remove bread and place on cooling rack, or eat warm from the oven.
